Fill a large pot ¾ full with water and bring to the boil on a medium flame.

While you wait for the water to boil, put the extra virgin olive oil into a pan and heat over a low flame.

Take lightly crushed garlic cloves, together with the chilli and add it to the heated oil in the pan. It is important to pay attention not to burn the sauce! Keep an eye on the garlic cular which should turn a golden colour. Set pan aside once cooked.

Once the water has boiled, add the salt and the spaghetti. The spaghetti should be taken off the stove and drained approximately two minutes earlier than the recommended cooking time on pasta packet’s instructions.

Once drained add the cooked spaghetti to the pan with the sauce. Return pan to the flame and sauté for approximately 1 minute. Serve hot.
