Chickpea flour: 10.58 oz
Warm water: 0.95L (remember, warm not hot water)
Extra virgin olive oil: 1 cup
Salt: to taste
Pepper: to taste
Rosemary (optional): 1 pinch (if it is powder) or 1 sprig (if it is fresh)

Farinata, also known as Chickpea Cake, is a traditional recipe from Liguria and other central and northern areas of Italy. This simple recipe is packed full of flavour, straight forward to cook and can easily be prepared at home. After you smell the intoxicating aroma of Farinata as it comes out of the oven, it becomes impossible to turn down a slice of this tasty dish. Liguria offers different kinds of Farinata. In some areas you can enjoy Farinata with garlic and rosemary, while in others Liguria districts it is seasoned only with pepper.

Dilute the flour with warm water using a whisk paying attention not to leave any clumps.
Add a pinch of salt. Leave the creamy mixture to sit for at least 1 hour, removing any foam the flour may produce with a spoon.

After 6 hours, preheat the oven to 200°C or 392° F. Put the mixture into a bake tray ensuring that the Farinata is no higher than 0.59 inches.
Add the extra virgin olive oil and mix everything together for a few minutes. Add the rosemary and then pop the baking tray into the oven for 20 min.

It is ready when the Farinata becomes crispy. Serve hot and season with pepper.
