Torta Margherita is one of the most simple cake. It is very popular for breakfast, for children’s parties  and as sweet snack.  Times ago, it was a very poor dessert as it was prepared without butter or extra virgin olive oil or any other kind of fat. Today, the butter is usually used. The name reminds the shape of a daisy and it is usually served cut into wedge-shape slices. As a consequence, once the cake has been cut, it seems a daisy, with the white surface while the inside part is yellow. Every slice seems a petal.

Separate the yolks from egg white. Whip the egg whites up, with a pinch of salt. We suggest to use eggs at ambient temperature. You have to obtain a white mousse. To understand when it is ready, you can turn the bowl with the mousse upside down and if the mousse doesn’t slip away, it means it is ready. Beat the yolks with the sugar.

Sift the flour, the baking powder and the potato starch. Add it  to the yolks little by little. Knead until you have an homogeneous dough.

Add the lemon juice. Add  the white egg little by little. Mix  all together very well.

Preheat the oven at 356° F. Take a baking tray. Grease it with the butter and then just a little bit of flour. Add the dough. Level it well. Cook for 70 min at 302° F. When it is cooked, cut in wedges. Serve.
